For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

16 oz cream cheese, softened

½ cup granulated sugar

¼ cup brown sugar

1 teaspoon vanilla extract

2 large eggs

1 cup ricotta cheese

½ cup mini chocolate chips

¼ cup chopped pistachios (optional)

½ teaspoon cinnamon

For the topping:

¼ cup powdered sugar (for dusting)

Extra mini chocolate chips and pistachios for garnish

Prepare the Crust: Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9x9-inch baking pan to create an even layer. Bake for 10 minutes, then remove and let cool.

    Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese, granulated sugar, and brown sugar until smooth. Add the vanilla extract and beat in the eggs, one at a time, ensuring each is fully incorporated.

      Add the ricotta cheese and mix until fully blended. Gently fold in the mini chocolate chips, pistachios (if using), and cinnamon, combining just until evenly distributed in the batter.

        Assemble and Bake: Pour the cheesecake filling over the pre-baked crust, spreading it evenly with a spatula. Bake in the preheated oven for 30-35 minutes or until the center is set but still slightly jiggles (it will firm up as it cools).

          Cool and Chill: Once baked, remove the cheesecake bars from the oven and allow them to cool in the pan at room temperature for about 1 hour. Then, refrigerate for at least 3 hours or overnight to set completely.

            Serve: Once chilled, remove from the refrigerator. Carefully lift the bars from the pan using the edges of the parchment paper (if used). Cut into squares and dust with powdered sugar. Garnish with extra mini chocolate chips and pistachios.
