8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon Cajun seasoning

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Prepare the Shrimp: In a bowl, toss the shrimp with Cajun seasoning, ensuring they are evenly coated.

      Sauté Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the diced onion and bell pepper. Sauté for about 3-4 minutes until they begin to soften.

        Add Garlic and Tomatoes: Stir in the minced garlic and halved cherry tomatoes, cooking for an additional 2 minutes until fragrant.

          Cook the Shrimp: Add the seasoned shrimp to the skillet. Cook for about 4-5 minutes, stirring occasionally, until the shrimp are pink and cooked through.

            Create the Sauce: Lower the heat and stir in the heavy cream, paprika, and cayenne pepper. Let the sauce simmer for about 2-3 minutes, allowing it to thicken slightly. Season with salt and black pepper to taste.

              Combine Pasta and Sauce: Add the cooked pasta into the skillet, tossing well to coat the pasta in the creamy Cajun sauce. Cook for another minute to warm through.

                Garnish and Serve: Remove from heat and sprinkle with fresh parsley. Serve with grated Parmesan cheese on top if desired.
