1 lb boneless, skinless chicken thighs

1 cup orzo pasta

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 can (14.5 oz) diced tomatoes, drained

2 cups chicken broth

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Season & Sear the Chicken: In a large skillet, add olive oil over medium-high heat. Season the chicken thighs with Cajun seasoning, smoked paprika, salt, and pepper. Sear the chicken in the skillet for approximately 5-7 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.

    Sauté Aromatics: In the same skillet, add the diced onions and bell peppers. Sauté for about 4-5 minutes until the onions are translucent and the peppers have softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Cooking Orzo: Add the drained tomatoes, chicken broth, and orzo to the skillet. Stir to combine, then bring to a boil. Reduce heat to low, cover, and simmer for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

        Combine: While the orzo is cooking, slice the seared chicken into bite-sized pieces. Once the orzo is ready, gently fold the chicken into the mixture. Adjust seasoning with additional salt, pepper, or Cajun seasoning if desired.

          Serve: Remove from heat and let it rest for a few minutes. Garnish with freshly chopped parsley and serve with lemon wedges on the side for an extra zing.
