For the Cajun Chicken:

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon olive oil

Salt and pepper to taste

For the Avocado Corn Salsa:

1 ripe avocado, diced

1 cup corn (fresh, canned or frozen)

1 small red onion, finely chopped

1 medium tomato, diced

1 jalapeño, seeded and minced (optional for extra heat)

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

Salt and pepper to taste

Instructions
 

Prepare the Cajun Chicken:

    - Pat the chicken breasts dry with paper towels. Season both sides with Cajun seasoning, garlic powder, onion powder, salt, and pepper.

      Cook the Chicken:

        - In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side, or until they are golden brown and the internal temperature reaches 165°F (75°C). Remove from the skillet and let rest for a few minutes before slicing.

          Make the Avocado Corn Salsa:

            - In a mixing bowl, combine the diced avocado, corn, red onion, tomato, jalapeño (if using), lime juice, and cilantro. Gently toss to mix, and season with salt and pepper to taste.

              Serve:

                - Slice the Cajun chicken and arrange it on a plate. Spoon a generous amount of avocado corn salsa over the chicken. Optionally, garnish with additional cilantro or lime wedges.
