Ingredients

8 oz fettuccine pasta

1 tablespoon olive oil

1 large chicken breast, diced

1 tablespoon Cajun seasoning

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup sun-dried tomatoes, chopped

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Fettuccine: In a large pot of salted boiling water, cook the fettuccine according to the package instructions until al dente. Drain and set aside.

Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and sprinkle with Cajun seasoning. Sauté for about 5-7 minutes, or until the chicken is fully cooked and no longer pink in the center.

Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.

Make the Alfredo Sauce: Reduce the heat to low. Pour in the heavy cream and stir well. Gradually add the Parmesan cheese, stirring constantly until the cheese is melted and the sauce is smooth. If the sauce is too thick, add a little pasta water to reach your desired consistency.

Combine Ingredients: Add the sun-dried tomatoes and red pepper flakes (if using) to the sauce. Then, add the cooked fettuccine to the skillet. Toss everything together until the pasta is well-coated in the creamy Cajun sauce. Season with salt and pepper to taste.

Serve: Remove from heat and garnish with chopped parsley before serving. Enjoy your Spicy Cajun Alfredo!
