1 large head of cabbage

1 pound ground beef or turkey

1 cup uncooked rice

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) tomato sauce

1 can (14.5 oz) diced tomatoes

2 teaspoons paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ cup fresh parsley, chopped

1 tablespoon olive oil

1 cup beef or vegetable broth

Prep the Cabbage: Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the entire head into the boiling water. Blanch the cabbage for about 2-3 minutes, or until the leaves are pliable. Carefully remove the cabbage and let it cool. Once cool, gently peel off 10-12 leaves, setting them aside to fill later.

    Prepare the Filling: In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes. In a large bowl, combine the cooked onion and garlic with the ground meat, uncooked rice, paprika, thyme, salt, pepper, and fresh parsley. Mix well until thoroughly combined.

      Fill the Cabbage Leaves: Lay a cabbage leaf on a flat surface. Place about 2-3 tablespoons of the meat mixture at the base of the leaf. Fold the sides in and roll it up tightly, like a burrito. Repeat with the remaining leaves and filling.

        Prepare Sauce: In a separate bowl, mix together the tomato sauce, diced tomatoes, and broth. Reserve about ½ cup of the sauce for later.

          Assemble and Cook: Preheat your oven to 350°F (175°C). Pour a thin layer of the sauce mixture on the bottom of a large baking dish. Arrange the cabbage rolls seam-side down in the dish. Pour the remaining sauce over the rolls, ensuring they are well covered.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45-50 minutes. After that, remove the foil and bake for an additional 10-15 minutes to allow the top to brown slightly.

              Serve: Allow the cabbage rolls to cool for a few minutes before serving. Garnish with additional parsley if desired.
