1 ½ cups warm water (110°F - 115°F)

1 packet (2 ¼ teaspoons) active dry yeast

2 tablespoons granulated sugar

4 cups all-purpose flour

½ cup unsalted butter, melted (plus extra for brushing)

1 teaspoon salt

⅓ cup baking soda

1 large egg, beaten (for egg wash)

Coarse sea salt, for sprinkling

Activate the Yeast: In a large mixing bowl, combine the warm water, yeast, and sugar. Let it sit for about 5 minutes, or until it becomes foamy.

    Mix the Dough: Add the melted butter and salt to the yeast mixture. Gradually mix in the flour until a dough forms. Knead the dough on a floured surface for about 5-7 minutes, until it’s smooth and elastic.

      Let it Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

        Prepare the Baking Soda Bath: In a large pot, bring 4 cups of water to a gentle simmer. Stir in the baking soda until dissolved, then remove from heat.

          Shape the Pretzel Bites: Once the dough has risen, punch it down and turn it out onto a lightly floured surface. Roll it into a long rope, about 1 inch thick. Cut the rope into 1-inch pieces to form the pretzel bites.

            Boil the Pretzel Bites: Preheat your oven to 425°F (220°C). Using a slotted spoon, carefully drop a few pretzel bites into the baking soda bath for about 30 seconds, then transfer them to a parchment-lined baking sheet.

              Egg Wash & Salt: Brush the tops of the pretzel bites with the beaten egg and sprinkle with coarse sea salt.

                Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until golden brown.

                  Finish with Butter: Remove the pretzel bites from the oven and immediately brush them with melted butter for that extra richness.

                    Serve and Enjoy: Let the pretzel bites cool for a few minutes before serving. Enjoy them warm with your favorite dipping sauce like mustard or cheese!
