Ingredients
  

4 pounds of Yukon Gold potatoes, peeled and cubed

1 cup unsalted butter, melted

1 cup heavy cream

1 cup whole milk

6 cloves garlic, minced

1 cup grated Parmesan cheese

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper to taste

½ cup fresh chives, chopped (for garnish)

1 cup shredded cheddar cheese (optional, for topping)

Instructions
 

Boil the Potatoes: In a large pot, place the peeled and cubed Yukon Gold potatoes. Cover them with cold salted water and bring to a boil over medium-high heat. Cook for about 15-20 minutes or until the potatoes are fork-tender.

    Prepare the Garlic Butter: While the potatoes are boiling, in a small saucepan, combine the melted butter and minced garlic. Heat over low heat for 2-3 minutes until fragrant, being careful not to let the garlic brown.

      Mash the Potatoes: Once the potatoes are cooked, drain them well and return to the pot. Use a potato masher or a hand mixer to mash the potatoes until smooth.

        Mix in Cream and Cheese: Slowly add in heavy cream and milk, mixing until creamy. Stir in the garlic butter, grated Parmesan cheese, fresh rosemary, fresh thyme, salt, and pepper. Adjust seasoning to taste as needed.

          Transfer to Casserole Dish: Preheat your oven to 350°F (175°C). Grease a 9x13 inch casserole dish and transfer the mashed potato mixture into it, spreading evenly.

            Add Cheddar Topping (Optional): If using, sprinkle the shredded cheddar cheese on top of the mashed potatoes for a cheesy crust.

              Bake the Casserole: Place the casserole in the preheated oven and bake for about 25-30 minutes, until the top is golden brown and bubbly.

                Garnish and Serve: Remove the casserole from the oven and let it cool slightly. Garnish with fresh chives before serving.
