4 large bell peppers (red, yellow, or green)

2 cups cooked shredded chicken (rotisserie chicken works great)

1/2 cup buffalo sauce (adjust for spice preference)

1 cup cream cheese, softened

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup ranch dressing

1/4 cup green onions, chopped (for garnish)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

      Make the Filling: In a large bowl, combine the shredded chicken, buffalo sauce, cream cheese, cheddar cheese, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Stuff the Peppers: Spoon the buffalo chicken mixture into each bell pepper, packing it tightly. Top each pepper with a sprinkle of additional cheddar cheese.

          Bake: Cover the baking dish loosely with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.

            Garnish and Serve: Once baked, remove from the oven and let the peppers cool for a few minutes. Garnish with chopped green onions before serving.
