2 large sweet potatoes

2 cups cooked chicken, shredded

1/2 cup buffalo sauce (adjust to taste)

1/4 cup ranch dressing (or blue cheese dressing)

1 cup shredded cheddar cheese

1/4 cup green onions, chopped

Salt and pepper, to taste

Olive oil

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash the sweet potatoes and pierce each potato several times with a fork. Rub a little olive oil on the skin and sprinkle with salt.

      Bake the sweet potatoes directly on the oven rack for about 45-60 minutes or until they are tender (test with a fork).

        While the potatoes are baking, in a bowl, combine the shredded chicken with buffalo sauce, mixing well. Adjust the heat level to your preference by adding more or less sauce.

          Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes.

            Slice each sweet potato in half lengthwise and gently scoop out some of the flesh (leave enough to keep the skin intact).

              Mix the scooped-out sweet potato with the buffalo chicken mixture, ranch dressing, and half of the shredded cheese. Season with salt and pepper.

                Spoon the buffalo chicken mixture back into the sweet potato skins, topping each with the remaining cheddar cheese.

                  Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

                    Remove from the oven and garnish with chopped green onions.
