Buffalo Chicken Enchiladas

2 cups cooked chicken, shredded

1/2 cup buffalo hot sauce

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup green onions, chopped

8 flour tortillas

1 can (10 oz) diced tomatoes with green chilies

1 cup sour cream

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Filling: In a large mixing bowl, combine shredded chicken, buffalo hot sauce, cream cheese, garlic powder, half of the cheddar cheese, and half of the chopped green onions. Mix until well combined. Season with salt and pepper to taste.

      Assemble Enchiladas: Spread a few tablespoons of the diced tomatoes with green chilies on the bottom of a greased 9x13 inch baking dish. Take a tortilla and fill it with a portion of the chicken mixture, then roll it up and place it seam side down in the dish. Repeat this process with all tortillas.

        Top Enchiladas: Once all the enchiladas are assembled, pour any remaining buffalo sauce over the top. Add the rest of the diced tomatoes with green chilies and sprinkle the remaining cheddar cheese across the top.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

            Garnish & Serve: Remove from the oven, let it cool slightly, then drizzle sour cream on top and sprinkle with the rest of the green onions before serving.
