Ingredients
  

4 large sweet bell peppers (any color)

2 cups shredded cooked chicken (rotisserie works well)

1 cup cream cheese, softened

1/2 cup buffalo wing sauce (adjust to your heat preference)

1/2 cup ranch dressing

1 cup shredded cheddar cheese, plus extra for topping

1/2 cup crumbled blue cheese (optional)

2 green onions, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peppers: Cut the tops off the sweet bell peppers and remove the seeds and membranes. Set aside.

      Make the Dip Filling:

        - In a large mixing bowl, combine the shredded chicken, softened cream cheese, buffalo wing sauce, ranch dressing, and shredded cheddar cheese. Stir until well combined. If you like blue cheese, fold it in gently.

          - Season the mixture with salt and pepper to taste.

            Stuff the Peppers: Take each sweet bell pepper and generously fill them with the buffalo chicken dip mixture, packing it down gently.

              Top with Cheese: Place the stuffed peppers in a baking dish. Sprinkle additional shredded cheddar cheese on top of each stuffed pepper.

                Bake: Cover the dish with foil and bake in the preheated oven for 25-30 minutes. Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                  Garnish and Serve: Once baked, remove from the oven and let cool slightly. Sprinkle with chopped green onions before serving.
