Ingredients

2 boneless, skinless chicken cutlets

1 cup cherry tomatoes, halved

1/4 cup fresh basil, chopped

1 clove garlic, minced

1 tablespoon balsamic vinegar

1 tablespoon olive oil

Salt and pepper, to taste

1/2 cup shredded mozzarella cheese

Balsamic glaze (for drizzling)

Optional: Crusty bread for serving

Instructions

Prep the Topping: In a bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, 1 tablespoon of olive oil, salt, and pepper. Toss everything together and let it sit to marinate while you cook the chicken.

Cook the Chicken: Heat a skillet over medium-high heat. Season the chicken cutlets with salt and pepper on both sides. Once the skillet is hot, add a bit of oil if needed. Place the chicken cutlets in the skillet and cook for about 3-4 minutes on each side, or until they are golden brown and cooked through.

Melt the Cheese: Once the chicken is cooked, sprinkle the shredded mozzarella cheese on each cutlet. Cover the skillet with a lid (or a sheet of foil) to help the cheese melt, and let it cook for an additional 1-2 minutes.

Assemble the Dish: Remove the chicken cutlets from the skillet and place them on a serving platter. Spoon the marinated tomato and basil mixture generously over each cutlet.

Drizzle and Serve: Finish with a drizzle of balsamic glaze over the top for extra flavor. Serve immediately with optional crusty bread on the side for dipping.
