2 cups broccoli florets

2 medium-sized potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup milk (or plant-based milk for a dairy-free option)

1 ½ cups shredded sharp cheddar cheese

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for a kick)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic, and cook for an additional 1-2 minutes until fragrant.

    Cook the Vegetables: Stir in the diced potatoes and broccoli florets. Cook for another 5 minutes, allowing the vegetables to slightly soften.

      Add Broth & Seasoning: Pour in the vegetable broth and add the dried thyme, salt, black pepper, and cayenne pepper if using. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 15-20 minutes, or until the potatoes are tender.

        Blend the Soup: Using an immersion blender, puree the soup until smooth. (Alternatively, you can carefully transfer the soup to a blender in batches.)
