4 large buttery croissants

4 large eggs

4 slices of crispy bacon

1 cup baby spinach

1 cup sliced tomatoes

½ cup sharp cheddar cheese, shredded

¼ cup cream cheese, softened

1 tablespoon fresh chives, chopped

1 teaspoon garlic powder

Salt and pepper to taste

A drizzle of hot sauce (optional)

Prepare the Base: Preheat your oven to 375°F (190°C). Cut each croissant in half lengthwise to create a top and bottom.

    Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove and set on a paper towel to drain excess grease.

      Scramble the Eggs: In the same skillet (remove excess grease if necessary), whisk together the eggs, salt, pepper, and garlic powder. Cook over medium-low heat, stirring frequently until just set. Remove from heat.

        Make the Cream Cheese Spread: In a small bowl, combine the softened cream cheese, chopped chives, and a dash of salt and pepper. Mix until smooth.

          Assemble the Sandwich: Spread a generous layer of the cream cheese mixture on the bottom half of each croissant. Layer with spinach, followed by some tomato slices. Next, add a layer of scrambled eggs and top with crispy bacon and shredded cheddar cheese.

            Bake: Place the assembled sandwiches on a baking sheet and pop them in the oven for about 8-10 minutes, or until the cheese is melted and the croissants are warmed through.

              Serve: Remove from the oven, drizzle with hot sauce if desired, and place the top half of the croissant onto each sandwich. Cut in half and serve warm.
