8 large eggs

1 cup milk

1 pound breakfast sausage (Italian or your choice)

2 cups shredded cheddar cheese

1 cup diced bell peppers (any color)

1 cup diced onions

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

4 cups cubed day-old bread (preferably sourdough or French bread)

Optional: chopped green onions or parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and cooked through, breaking it up into small pieces with a spatula. Drain excess grease if necessary, then set aside to cool slightly.

      Sauté the Vegetables: In the same skillet, sauté the diced onions and bell peppers until they are softened, approximately 5-7 minutes. Remove from heat.

        Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, garlic powder, oregano, salt, and pepper until well combined.

          Combine Ingredients: In the greased baking dish, layer the cubed bread evenly across the bottom. Top with the cooked sausage, sautéed vegetables, and shredded cheddar cheese. Pour the egg mixture over the top, making sure to evenly distribute the eggs throughout.

            Bake the Casserole: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the eggs are set and the top is golden brown.
