Ingredients
  

1 lb store-bought gnocchi

4 oz Boursin cheese (garlic & fine herbs flavor)

4 strips of bacon, chopped

2 cups broccoli florets

1 cup cherry tomatoes, halved

2 cloves garlic, minced

1/4 cup heavy cream

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup grated Parmesan cheese (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.

    Prepare the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate and drain excess grease from the skillet, leaving about 1 tablespoon in the pan.

      Sauté the Broccoli: In the same skillet, add the broccoli florets and cook for about 3-4 minutes until bright green and tender-crisp. Add the minced garlic and cherry tomatoes, and continue cooking for another 2 minutes, until fragrant and tomatoes begin to soften.

        Add the Gnocchi: Gently toss the cooked gnocchi into the skillet with the broccoli and tomatoes, stirring to combine all ingredients.

          Incorporate the Boursin: Lower the heat and add the Boursin cheese and heavy cream to the skillet. Stir until the cheese melts and creates a creamy sauce, coating the gnocchi evenly. If the sauce is too thick, add a splash of pasta cooking water to reach desired consistency.

            Season & Garnish: Add the crispy bacon back to the skillet, along with salt and pepper to taste. Mix well. Garnish with grated Parmesan cheese and chopped fresh parsley.
