Ingredients

1 lb boneless, skinless chicken thighs, chopped into bite-sized pieces

1/2 cup bourbon

1/4 cup soy sauce

1/4 cup brown sugar

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water

1/2 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional, for heat)

3 green onions, sliced (for garnish)

Steamed rice for serving

Instructions

Marinate the Chicken: In a medium bowl, combine bourbon, soy sauce, brown sugar, minced garlic, grated ginger, black pepper, and red pepper flakes (if using). Add the chopped chicken to the marinade, ensuring it's well coated. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more intense flavor.

Sear the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Sear the chicken pieces for about 3-4 minutes, until browned on all sides.

Add the Marinade: Pour the reserved marinade into the skillet with the seared chicken. Bring the mixture to a gentle simmer.

Thicken the Sauce: Stir in the cornstarch and water mixture to the skillet. Let it simmer for an additional 2-3 minutes, stirring occasionally, until the sauce thickens and coats the chicken nicely.

Serve: Remove from heat and serve the bourbon chicken over a bed of steamed rice. Garnish with sliced green onions for a fresh finish.
