Ingredients
  

For the Cupcakes:

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

½ cup buttermilk

1 tsp vanilla extract

1 ½ tsp baking powder

½ tsp baking soda

¼ tsp salt

For the Pastry Cream:

1 ½ cups whole milk

½ cup granulated sugar

4 large egg yolks

3 tbsp cornstarch

2 tbsp unsalted butter

1 tsp vanilla extract

For the Chocolate Ganache:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

1 tbsp unsalted butter

Instructions
 

Make the Cupcakes:

    - Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

      - In a large bowl, cream together the softened butter and sugar until light and fluffy.

        - Beat in the eggs, one at a time, then stir in the vanilla extract.

          - In another bowl, whisk together flour, baking powder, baking soda, and salt.

            - Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined.

              - Fill each cupcake liner about 2/3 full with the batter.

                - Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.

                  Prepare the Pastry Cream:

                    - In a saucepan over medium heat, warm the milk and sugar until just simmering.

                      - In a separate bowl, whisk together egg yolks and cornstarch until smooth.

                        - Gradually pour the warm milk mixture into the egg yolk mixture, whisking continuously to temper the eggs.

                          - Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened, about 5-7 minutes.

                            - Remove from heat and stir in butter and vanilla extract. Let cool in the fridge until set.

                              Make the Chocolate Ganache:

                                - Place the chopped chocolate in a heatproof bowl.

                                  - In a saucepan, bring the heavy cream to a gentle simmer, then pour it over the chocolate. Let it sit for 5 minutes, then stir until smooth and glossy.

                                    - Add the butter and stir until melted and well combined.

                                      Assemble the Cupcakes:

                                        - Once the cupcakes are cool, use a small knife or cupcake corer to cut a small hole in the center of each cupcake.

                                          - Fill the hole with pastry cream, using a piping bag or spoon.

                                            - Dip the top of each filled cupcake into the chocolate ganache, allowing the excess to drip off.

                                              Chill and Serve:

                                                - Place the cupcakes in the refrigerator for about 30 minutes to set the ganache.
