Ingredients

For the Cake:

2 cups all-purpose flour

1 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

1 cup buttermilk

For the Pastry Cream:

2 cups whole milk

½ cup granulated sugar

3 large egg yolks

¼ cup cornstarch

2 tbsp unsalted butter

1 tsp vanilla extract

For the Chocolate Ganache:

1 cup semi-sweet chocolate chips

¾ cup heavy cream

1 tsp vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Make the Cake Batter:

      - In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

        - In a large bowl, cream the softened butter and granulated sugar until light and fluffy.

          - Add eggs one at a time, mixing well after each addition. Stir in vanilla.

            - Gradually add the flour mixture, alternating with buttermilk, beginning and ending with flour. Mix until just combined.

              Bake the Cake:

                - Divide the batter evenly between the two prepared pans.

                  - Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

                    Prepare the Pastry Cream:

                      - In a saucepan over medium heat, combine the milk and half the sugar. Heat until just boiling.

                        - In a bowl, whisk the egg yolks, remaining sugar, and cornstarch together until pale.

                          - Slowly add the hot milk mixture to the egg yolk mixture, whisking constantly to temper the eggs.

                            - Return the mixture to the saucepan and cook over low heat, stirring constantly until thickened. Remove from heat and stir in butter and vanilla. Refrigerate until cool.

                              Make the Chocolate Ganache:

                                - Place chocolate chips in a heatproof bowl. Heat heavy cream in a saucepan until just boiling, then pour over the chocolate chips.

                                  - Let sit for a minute, then stir until smooth. Add vanilla extract and let it cool slightly to thicken.

                                    Assemble the Cake:

                                      - Place one cake layer on a serving plate. Spread the cooled pastry cream evenly over the top.

                                        - Place the second cake layer on top.

                                          - Pour the chocolate ganache over the top of the cake, allowing it to drizzle down the sides.

                                            Serve:

                                              - Slice and serve your Boston Cream Cake Delight chilled or at room temperature. Enjoy!
