2 cups fresh blueberries

1 cup granulated sugar, divided

1 tablespoon lemon zest

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

4 large eggs

1/2 cup all-purpose flour

1/2 teaspoon baking powder

Pinch of salt

Powdered sugar for dusting (optional)

Whipped cream or vanilla ice cream for serving (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper for easy removal.

    In a medium bowl, combine the fresh blueberries with 1/4 cup of the granulated sugar, lemon zest, and lemon juice. Gently toss until the blueberries are evenly coated. Set aside to marinate for 15 minutes.

      In a separate large bowl, whisk together the remaining 3/4 cup of granulated sugar, vanilla extract, and eggs until the mixture is light and fluffy.

        Sift in the flour, baking powder, and salt. Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

          Carefully fold in the marinated blueberries, along with their juices, until evenly distributed throughout the batter.

            Pour the batter into the prepared baking dish and smooth the top with a spatula.

              Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

                Allow the dessert to cool in the pan on a wire rack for about 10-15 minutes. Once cooled, slice into squares and dust with powdered sugar if desired.

                  Serve warm or at room temperature with a dollop of whipped cream or a scoop of vanilla ice cream.
