Ingredients
  

1 cup fresh blueberries (plus extra for topping)

1 block (8 oz) cream cheese, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/3 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup sour cream

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.

    Prepare Cream Cheese Filling:

      - In a mixing bowl, combine the softened cream cheese, 2 tablespoons of granulated sugar, and 1 teaspoon of vanilla extract. Mix until smooth and creamy. Set aside.

        Mix the Wet Ingredients:

          - In another large mixing bowl, whisk together the vegetable oil, remaining granulated sugar, brown sugar, eggs, and sour cream until well combined.

            Combine Dry Ingredients:

              - In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

                Combine Wet and Dry Ingredients:

                  - Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; some lumps are okay.

                    Fold in Blueberries:

                      - Gently fold in the fresh blueberries into the batter, reserving a few for topping.

                        Fill Muffin Tin:

                          - Spoon a tablespoon of muffin batter into each muffin cup, followed by a heaping teaspoon of the cream cheese filling, and then top with additional muffin batter to cover the filling. Sprinkle a few blueberries on top of each muffin.

                            Bake the Muffins:

                              - Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. The tops should be golden brown.

                                Cool and Serve:
