Ingredients

For the Cream Cheese Layer:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

For the Blueberry Cake:

2 cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

1 cup buttermilk

1 1/2 cups fresh blueberries (or frozen, thawed and drained)

For the Crumble Topping:

1/2 cup all-purpose flour

1/2 cup rolled oats

1/3 cup brown sugar, packed

1/2 teaspoon cinnamon

1/4 cup unsalted butter, melted

Instructions

Prepare the Cream Cheese Layer: In a bowl, beat the softened cream cheese with 1/4 cup granulated sugar until smooth. Add the egg and vanilla extract, mixing until fully combined. Set aside.

Make the Cake Batter: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan. In a large mixing bowl, whisk together 2 cups flour, 1 cup sugar, baking powder, baking soda, and salt. In a separate bowl, combine melted butter, 1 egg, and 1 teaspoon vanilla. Mix in the buttermilk until well combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to over-mix the batter.

Fold in the Blues: Gently fold in the blueberries into the batter.

Layer the Cake: Pour half of the batter into the prepared baking pan. Spread the cream cheese mixture evenly over the batter, then pour the remaining batter on top. Use a spatula to gently swirl everything together for a marbled effect.

Prepare the Crumble Topping: In a medium bowl, mix together the flour, oats, brown sugar, and cinnamon. Pour in the melted butter and stir until crumbly. Sprinkle the crumble mixture evenly over the top of the cake.

Bake: Place the cake in the preheated oven and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the cake to cool in the pan for about 10-15 minutes before slicing. Serve warm or at room temperature, and enjoy your blueberry bliss over a cup of coffee!
