Ingredients

4 tablespoons all-purpose flour

4 tablespoons granulated sugar

1/8 teaspoon baking powder

1/8 teaspoon salt

3 tablespoons whole milk (or almond milk for a dairy-free option)

2 tablespoons vegetable oil (or melted butter)

1/4 teaspoon vanilla extract

1/3 cup fresh blackberries (plus a few extra for garnish)

Powdered sugar (for dusting, optional)

Instructions

In a microwave-safe mug (about 12 oz in size), mix together the flour, sugar, baking powder, and salt until well combined.

Add the milk, vegetable oil, and vanilla extract to the dry ingredients. Stir until a smooth batter forms.

Gently fold in the blackberries, being careful not to smash them too much; you want some whole berries for texture.

Microwave the mug cake on high for 1 minute and 30 seconds. Keep an eye on it, as microwave wattages may vary; if it’s not set, add 10-second intervals until cooked through.

Allow the mug cake to cool for a minute before serving. Optional: dust with powdered sugar and garnish with a couple of fresh blackberries on top.

Dig in with a spoon and enjoy your delightful dessert!
