1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons granulated sugar

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 tablespoons dried culinary lavender

1/2 teaspoon lemon zest

For the blackberry sauce:

1 cup fresh blackberries

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon water

1 teaspoon cornstarch (optional, for thickening)

For garnish:

Fresh blackberries

Sprigs of lavender

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (163°C).

    Prepare the Crust:

      - In a medium bowl, combine graham cracker crumbs, melted butter, and sugar.

        - Mix until the crumbs are well-coated with butter.

          - Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust.

            - Bake for 10 minutes, then remove from the oven and set aside to cool.

              Make Cheesecake Filling:

                - In a large mixing bowl, beat the cream cheese until smooth and creamy.

                  - Gradually add the sugar and mix until fully incorporated.

                    - Add the eggs one at a time, mixing after each addition until just combined.

                      - Stir in the vanilla extract, dried lavender, and lemon zest.

                        - Pour the cream cheese mixture over the cooled crust in the springform pan.

                          Bake the Cheesecakes:

                            - Bake in the preheated oven for 50-60 minutes, or until the filling is set and a slight jiggle remains in the center.

                              - Turn off the oven and leave the cheesecake inside with the door cracked for 1 hour. This helps prevent cracking.

                                Chill the Cheesecake:

                                  - Remove the cheesecake from the oven and let it cool to room temperature.

                                    - Refrigerate for at least 4 hours or overnight for the best flavor.

                                      Prepare the Blackberry Sauce:

                                        - In a small saucepan, combine blackberries, sugar, lemon juice, and water.

                                          - Cook over medium heat, stirring gently until the mixture begins to bubble and the blackberries break down, about 5-7 minutes.

                                            - If you desire a thicker sauce, mix the cornstarch with a tablespoon of cold water, add it to the sauce, and cook for an additional minute until thickened.

                                              - Remove from heat and let cool.

                                                Serve:

                                                  - Carefully remove the cheesecake from the springform pan.

                                                    - Drizzle the blackberry sauce over the top.

                                                      - Garnish with fresh blackberries and additional sprigs of lavender, if desired.
