Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly ground

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 medium onion, sliced

1 bell pepper (any color), sliced

3 cloves garlic, minced

1 teaspoon ginger, minced

2 green onions, chopped for garnish

Cooked jasmine rice or cauliflower rice, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with the black pepper, soy sauce, oyster sauce, and cornstarch. Mix well to coat the chicken evenly. Let it marinate for at least 15-30 minutes to enhance the flavors.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until hot but not smoking.

      Cook the Chicken: Add the marinated chicken to the hot pan in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken to a plate.

        Sauté the Vegetables: In the same pan, add the sliced onion and bell pepper. Sauté for about 3-4 minutes until the vegetables are tender. Add the minced garlic and ginger, cooking for another minute until fragrant.

          Combine and Finish: Return the cooked chicken to the skillet with the sautéed vegetables. Stir well to combine and heat through, cooking for an additional 2-3 minutes.

            Serve: Garnish with chopped green onions and serve hot over jasmine rice or cauliflower rice.
