½ teaspoon baking soda

½ cup cold unsalted butter, cubed

¾ cup buttermilk

For the sausage gravy:

1 pound breakfast sausage (mild or spicy, depending on preference)

¼ cup all-purpose flour

2 cups whole milk

½ teaspoon black pepper

½ teaspoon garlic powder

Salt to taste

Optional: pinch of cayenne pepper for extra heat

Instructions
 

Making the Biscuits:

    - Preheat the oven to 450°F (230°C).

      - In a large mixing bowl, combine the flour, baking powder, salt, and baking soda.

        - Add the cold cubed butter to the flour mixture. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.

          - Pour in the buttermilk and stir until just combined (don’t overmix).

            - Turn the dough out onto a floured surface and gently knead 3-4 times. Pat the dough into a 1-inch thick rectangle.

              - Use a biscuit cutter or a glass to cut out biscuits and place them on a baking sheet lined with parchment paper. Press the biscuits together if necessary to minimize waste.

                - Bake for 12-15 minutes or until golden brown.

                  Making the Sausage Gravy:

                    - While the biscuits are baking, heat a large skillet over medium heat. Add the breakfast sausage and cook until browned and crumbly, about 5-7 minutes.

                      - Sprinkle the flour over the sausage and cook for an additional 2 minutes, stirring frequently to combine.

                        - Gradually whisk in the milk, making sure to scrape up any bits stuck to the bottom of the pan.

                          - Continue stirring until the gravy thickens and is bubbly, about 5-8 minutes.

                            - Season with black pepper, garlic powder, and salt (and cayenne if desired). Adjust seasoning to taste.

                              Serving:

                                - Split the warm biscuits in half and ladle the sausage gravy generously over them. Serve immediately and enjoy!
