For the crust:

1 ½ cups Biscoff cookies, crushed

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

1 cup Biscoff cookie butter

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 tablespoons all-purpose flour

For the topping:

½ cup Biscoff cookie butter, melted

Crushed Biscoff cookies for garnish

Instructions
 

Prepare the crust:

    - Preheat your oven to 350°F (175°C).

      - In a bowl, combine the crushed Biscoff cookies, melted butter, and sugar. Mix until well combined.

        - Press the mixture firmly into the bottom of a greased 9x9 inch baking pan to form an even layer.

          Bake the crust:

            - Bake the crust in the preheated oven for about 10 minutes, until slightly golden. Remove from the oven and let it cool.

              Make the cheesecake filling:

                - In a large mixing bowl, beat the softened cream cheese until smooth and creamy.

                  - Add the Biscoff cookie butter and granulated sugar, and mix until well combined.

                    - Add the eggs, one at a time, mixing after each addition. Then incorporate the vanilla extract and flour until smooth.

                      Assemble the cheesecake bars:

                        - Pour the cheesecake filling over the cooled Biscoff cookie crust, spreading it evenly.

                          - Bake in the oven for 25-30 minutes, or until the filling is set and the edges are lightly golden. The center should still have a slight jiggle.

                            Cool and top:

                              - Allow the cheesecake bars to cool at room temperature, then refrigerate for at least 4 hours or preferably overnight for a firmer texture.

                                - Once chilled, drizzle the melted Biscoff cookie butter over the top and sprinkle with crushed Biscoff cookies.

                                  Serve:
