1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup sour cream

1 cup powdered sugar

Zest of 1 lemon

Zest of 1 lime

¼ cup freshly squeezed lemon juice

¼ cup freshly squeezed lime juice

1 teaspoon vanilla extract

1 cup cherries, pitted and halved

½ cup pistachios, roughly chopped

Pinch of salt

Preheat your oven to 325°F (160°C).

    In a medium bowl, mix the graham cracker crumbs with the melted butter until fully combined. Press this mixture firmly into the bottom of a 9-inch springform pan to form a crust. Bake for 10 minutes, then remove and let it cool.

      In a large mixing bowl, beat the cream cheese until smooth and creamy.

        Add the sour cream, powdered sugar, and a pinch of salt to the cream cheese. Mix until well combined.

          Stir in the lemon zest, lime zest, lemon juice, lime juice, and vanilla extract, mixing until smooth and fluffy.

            Gently fold in the halved cherries and chopped pistachios to the cheesecake batter.

              Pour the cheesecake batter over the cooled crust and spread it evenly.

                Bake in the preheated oven for 45-50 minutes, or until the edges are set, and the center has a slight wobble.

                  Once baked, turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour. Then refrigerate for at least 4 hours or overnight for best results.
