Ingredients
  

4 large flour tortillas

2 cups fresh spinach, chopped

1 cup mushrooms, sliced

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon cumin

Salt and pepper to taste

Salsa and sour cream for serving

Instructions
 

Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent (about 3-4 minutes).

    Add Mushrooms and Garlic: Stir in the sliced mushrooms and minced garlic. Cook for another 3-4 minutes until mushrooms soften.

      Add Spinach: Toss in the chopped spinach and cumin. Cook until wilted (about 2 minutes). Season with salt and pepper to taste. Remove from heat and let cool slightly.

        Assemble Quesadilla: Heat a clean skillet or griddle over medium heat. Place one tortilla in the pan and sprinkle half of the mozzarella and cheddar cheese evenly over it. Add half of the vegetable mixture on top, then sprinkle the remaining cheese.

          Top and Cook: Place another tortilla on top. Cook for 3-4 minutes until the bottom tortilla is golden and the cheese begins to melt. Carefully flip the quesadilla and cook for another 3-4 minutes until browned and crispy.

            Slice and Serve: Remove from the pan and let cool for a minute. Cut into wedges and serve with salsa and sour cream on the side.
