2 lbs oxtail, cut into segments

1 large onion, quartered

4 cloves garlic, smashed

2 carrots, chopped into large pieces

2 celery stalks, chopped

1 large potato, diced

1 bell pepper (any color), chopped

1 can (14 oz) diced tomatoes

1 tablespoon tomato paste

6 cups beef broth

2 bay leaves

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons vegetable oil

Fresh parsley, chopped (for garnish)

Sear the Oxtail: In a large pot, heat the vegetable oil over medium-high heat. Season the oxtail with salt and pepper. Sear the oxtail pieces in batches until they are browned on all sides. Remove and set aside.

    Sauté Aromatics: In the same pot, add the onions and garlic. Sauté for about 3-4 minutes until soft and fragrant.

      Add Vegetables: Add the chopped carrots, celery, bell pepper, and potato to the pot. Cook for another 5 minutes, stirring occasionally.

        Build the Broth: Stir in the canned tomatoes, tomato paste, beef broth, bay leaves, thyme, and smoked paprika. Mix well to combine all the ingredients.

          Return Oxtail: Add the seared oxtail back to the pot. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 2.5 to 3 hours, or until the oxtail is tender and falling off the bone.

            Adjust Seasoning: Once the oxtail is tender, taste the broth and adjust seasoning with more salt and pepper if necessary. Remove bay leaves before serving.

              Serve: Ladle the oxtail and vegetables into bowls and garnish with freshly chopped parsley. Enjoy your comforting meal warm!
