Ingredients
  

1 lb boneless, skinless chicken thighs, cut into 1-inch pieces

1 fresh pineapple, peeled, cored, and cut into 1-inch chunks

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1/2 cup soy sauce

1/4 cup honey

2 tablespoons rice vinegar

2 cloves garlic, minced

1 tablespoon grated ginger

Salt and pepper to taste

Skewers (soaked in water for 30 minutes if wooden)

Instructions
 

Marinate the Chicken: In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Add the chicken pieces, season with salt and pepper, and stir to coat. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

    Prepare Skewers: Thread the marinated chicken, pineapple chunks, and bell pepper pieces alternately onto the skewers, leaving a little space between each piece.

      Grill the Skewers: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

        Serve: Remove the skewers from the grill and allow them to rest for a few minutes. Serve with extra pineapple and a sprinkle of sesame seeds if desired.
