6 large eggs

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon white vinegar

1/4 teaspoon salt

1/4 teaspoon black pepper

1/8 teaspoon paprika (plus extra for garnish)

Fresh chives or parsley (for garnish)

Instructions
 

Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium heat. Once boiling, cover the pan and remove it from heat. Let it sit for 12 minutes.

    Cool the Eggs: After 12 minutes, transfer the eggs to an ice bath (a bowl filled with ice water) to stop the cooking process. Let them cool for about 5-10 minutes.

      Peel the Eggs: Gently crack the eggshells and peel them under running water to make it easier. Pat the peeled eggs dry with a paper towel.

        Prepare the Filling: Slice the eggs in half lengthwise. Carefully remove the yolks and place them in a mixing bowl. Add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and paprika to the yolks.

          Blend: Mash the yolk mixture with a fork until smooth and creamy. Feel free to adjust the seasoning to your taste.

            Fill the Eggs: Using a spoon or a piping bag, fill the egg whites with the yolk mixture.

              Garnish: Sprinkle a pinch of paprika on top for color. Optionally, finely chop chives or parsley for an additional garnish.
