3 pounds baby potatoes, halved

1 packet (1 oz) ranch dressing mix

1 cup shredded cheddar cheese

1 cup sour cream

1/2 cup mayonnaise

1/2 cup green onions, thinly sliced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C). Grease a large baking dish or line it with parchment paper for easier cleanup.

    In a large mixing bowl, combine the halved baby potatoes, olive oil, ranch dressing mix, garlic powder, onion powder, salt, and pepper. Toss until the potatoes are evenly coated.

      Spread the coated potatoes in a single layer in the prepared baking dish. Roast in the preheated oven for about 25-30 minutes, or until fork-tender and golden brown.

        While the potatoes are roasting, prepare the cheesy sauce by mixing the shredded cheddar cheese, sour cream, mayonnaise, and half of the green onions in a medium bowl. Stir until well combined.

          Once the potatoes are done, remove them from the oven and carefully pour the cheesy mixture over the hot potatoes. Toss gently to combine.

            Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Remove from the oven, garnish with the remaining green onions and fresh parsley if desired. Serve hot and enjoy your ultimate comfort food!
