8 oz cream cheese, softened

1/4 cup powdered sugar

1/4 cup sour cream

1 tsp vanilla extract

1/2 cup crushed graham crackers

1/4 cup unsalted butter, melted

1 cup mixed berries (strawberries, blueberries, raspberries)

2 tbsp granulated sugar

1 tbsp lemon juice

Fresh mint leaves (for garnish, optional)

Prepare the Berry Sauce: In a small saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice. Cook for 5-7 minutes until the berries are soft and syrupy. Remove from heat and let it cool slightly.

    Make the Crust: In a medium bowl, mix the crushed graham crackers and melted butter until well combined. Press the mixture firmly into the bottom of mini muffin tins or silicone molds to form the crust. Set aside.

      Cheesecake Filling: In a large mixing bowl, combine the softened cream cheese, powdered sugar, sour cream, and vanilla extract. Beat with an electric mixer until the mixture is smooth and creamy.

        Assemble Cheesecake Bites: Spoon the cheesecake filling over the prepared crust in each muffin tin, filling them about 2/3 full. Swirl a teaspoon of the berry sauce into each cheesecake bite for a marbled effect.

          Chill: Place the filled muffin tins in the refrigerator for at least 4 hours or until set. For best results, chill overnight.

            Serve: Once set, gently remove the cheesecake bites from the tin. Serve garnished with fresh mint leaves and additional berry sauce if desired.
