Ingredients

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

4 cups beef broth

1 cup elbow macaroni

1 cup carrots, diced

1 cup celery, diced

1 tsp dried basil

1 tsp dried oregano

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onions and garlic, and sauté for about 3-4 minutes until the onions become translucent.

Brown the Beef: Add the ground beef to the pot, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

Add Vegetables & Tomatoes: Stir in the diced carrots and celery, cooking for an additional 5 minutes. Then, pour in the diced tomatoes with their juices.

Pour in the Broth: Add the beef broth, dried basil, oregano, and season with salt and pepper. Bring the mixture to a gentle boil.

Cook the Macaroni: Once boiling, add the elbow macaroni to the pot. Reduce the heat to a simmer and cook for about 8-10 minutes, or until the macaroni is al dente.

Final Touches: Taste your soup and adjust seasoning if necessary. Remove from heat and let it sit for a few minutes.

Serve: Ladle the soup into bowls and garnish with freshly chopped parsley. Enjoy your hearty beef and tomato macaroni soup!
