Ingredients

1.5 lbs beef sirloin, cut into bite-sized tips

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 cups beef broth

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

2 tablespoons cornstarch mixed with 2 tablespoons water (slurry)

1 teaspoon dried thyme

1 teaspoon black pepper

1 teaspoon salt (adjust to taste)

1 cup sliced mushrooms (optional)

Fresh parsley for garnish

Instructions

Sear the Beef: In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the beef tips and sear on all sides until browned (about 5-7 minutes). Remove the beef and set aside.

Sauté Aromatics: In the same skillet, add the chopped onion and cook until translucent (about 3-4 minutes). Then, add the minced garlic and sliced mushrooms (if using) and cook for another 2 minutes until fragrant.

De-glaze the Pan: Pour in the beef broth, scraping up any browned bits from the bottom of the pan. Stir in Worcestershire sauce, soy sauce, thyme, pepper, and salt.

Simmer: Return the beef tips to the skillet. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let simmer for 25-30 minutes until the beef is tender and flavors meld.

Thicken the Gravy: Once the beef is tender, gradually stir in the cornstarch slurry, mixing until the gravy thickens (about 2-3 minutes). If the gravy is too thick, you can add some additional beef broth to reach your desired consistency.

Serve: Taste for seasoning adjustments, garnish with fresh parsley, and serve hot over mashed potatoes, rice, or noodles.
