Ingredients
  

1 lb ground beef

1 cup ricotta cheese

1 cup grated Parmesan cheese

2 cups fresh spinach, chopped

1 clove garlic, minced

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt

1 package (9 oz) fresh tortellini (cheese or beef-filled)

2 cups marinara sauce

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Add ground beef to the skillet and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.

      Stir in the chopped spinach, salt, black pepper, and onion powder. Cook for another 3-4 minutes until the spinach has wilted.

        Remove the skillet from heat and mix in the ricotta and ½ cup of the grated Parmesan cheese until well combined. Set aside to cool slightly.

          In a large pot of boiling salted water, cook the tortellini according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the tortellini.

            Gently fold the cooked tortellini into the beef and cheese mixture. If it appears dry, add the reserved pasta water a little at a time until well-coated.

              Pour marinara sauce into the skillet and heat through; stir gently to combine with tortellini and meat mixture.

                Once heated, serve immediately, garnished with the remaining Parmesan cheese and fresh basil if desired.
