1 pound ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) tomato sauce

1 can (14.5 oz) diced tomatoes

2 cups elbow macaroni

3 cups beef broth

1 teaspoon Italian seasoning

1/2 teaspoon black pepper

1 cup cottage cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large skillet, brown the ground beef over medium heat. Drain excess fat if necessary.

      Add the chopped onion, garlic, and bell pepper to the skillet, sautéing until the vegetables are softened, about 5-7 minutes.

        Stir in the tomato sauce, diced tomatoes, beef broth, Italian seasoning, and black pepper. Bring to a gentle boil.

          Add the elbow macaroni to the mixture, stirring to combine. Reduce heat and simmer for about 10 minutes, or until the macaroni is tender.

            Remove from heat and gently stir in the cottage cheese until well blended.

              Transfer the mixture to a 9x13 inch casserole dish, spreading it evenly.

                Sprinkle the mozzarella cheese and Parmesan cheese generously over the top.

                  Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.

                    Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and golden brown.

                      Remove from the oven and let it sit for 5 minutes before serving.

                        Garnish with fresh parsley, if desired, and enjoy your comforting, cheesy Beef Lombardi Casserole!
