Beef Bolognese with Creamy Garlic Butter Spaghetti

For the Bolognese:

1 lb (450g) ground beef

1 medium onion, finely chopped

2 carrots, diced

2 celery stalks, diced

4 cloves garlic, minced

1 can (14 oz) crushed tomatoes

2 tbsp tomato paste

1/2 cup red wine (optional)

1 cup beef broth

1 tsp dried oregano

1 tsp dried basil

1 bay leaf

Salt and pepper to taste

2 tbsp olive oil

For the Creamy Garlic Butter Spaghetti:

12 oz (340g) spaghetti

4 tbsp unsalted butter

3 cloves garlic, minced

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Prepare the Bolognese Sauce:

    - In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion, carrots, and celery, cooking until softened (about 5-7 minutes).

      - Stir in the minced garlic and cook for another minute until fragrant.

        - Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).

          - Add the red wine (if using) and let it simmer for 2-3 minutes until slightly reduced.

            - Stir in the crushed tomatoes, tomato paste, beef broth, oregano, basil, bay leaf, salt, and pepper. Bring to a simmer, then reduce the heat to low. Let it simmer gently for at least 30 minutes, stirring occasionally.

              Cook the Spaghetti:

                - In a large pot, bring salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

                  Prepare the Creamy Garlic Butter Sauce:

                    - In another large skillet over medium heat, melt the butter. Add the minced garlic and sauté until it's golden and fragrant (about 1-2 minutes).

                      - Stir in the heavy cream, Parmesan cheese, salt, and pepper. Simmer for a few minutes until slightly thickened. If the sauce is too thick, add a little reserved pasta water to loosen it.

                        Combine and Serve:

                          - Toss the drained spaghetti into the creamy garlic butter sauce, mixing until well coated.

                            - Remove the bay leaf from the Bolognese and serve the spaghetti topped with the rich beef Bolognese sauce.

                              - Garnish with chopped parsley and additional Parmesan cheese if desired.
