Ingredients
  

1 lb beef chuck, cut into 1-inch cubes

1 cup pearl barley, rinsed

4 cups beef broth

2 cups water

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, with juice

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

2 tablespoons olive oil

1 bay leaf

Fresh parsley, chopped for garnish

Instructions
 

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef cubes, browning them on all sides for about 5-7 minutes. Remove the beef and set aside.

    In the same pot, add onions, carrots, and celery. Sauté for about 4-5 minutes until the vegetables begin to soften. Add garlic and sauté for an additional minute.

      Return the browned beef to the pot. Stir in the barley, beef broth, water, diced tomatoes (with their juice), dried thyme, dried rosemary, bay leaf, salt, and pepper.

        Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the barley is cooked through, stirring occasionally.

          Taste and adjust seasoning with more salt and pepper if needed. Remove the bay leaf before serving.

            Ladle the soup into bowls and garnish with fresh parsley. Enjoy!
