1 pound large shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust for spice tolerance)

Salt and pepper, to taste

Oil, for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 teaspoon honey

1 teaspoon lime juice

For Garnish:

Green onions, sliced

Chopped cilantro

Lime wedges

Marinate the Shrimp: In a medium bowl, pour the buttermilk over the shrimp. Season with salt and pepper. Let it marinate in the refrigerator for at least 30 minutes to 1 hour.

    Prepare the Breading Mixture: In a shallow dish, combine the flour, cornstarch, garlic powder, paprika, cayenne pepper, salt, and pepper. Mix well to ensure all dry ingredients are evenly distributed.

      Heat the Oil: In a large skillet or deep frying pan, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C).

        Coat the Shrimp: Remove the shrimp from the buttermilk, allowing excess to drip off. Dredge the shrimp in the breading mixture, pressing gently to adhere. Shake off any excess flour mixture.

          Fry the Shrimp: Carefully place the breaded shrimp into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes per side or until golden brown and crispy. Use a slotted spoon to transfer the fried shrimp to a paper towel-lined plate to drain excess oil.

            Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth and well-combined.

              Serve: Place the fried shrimp in a serving bowl, drizzle generously with the Bang Bang sauce, and toss to coat evenly. Garnish with sliced green onions and chopped cilantro. Serve with lime wedges on the side.
