1 pound boneless, skinless chicken thighs

1 cup buttermilk

1 cup panko breadcrumbs

1/2 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

12 slider buns

Leafy lettuce (like butter or Romaine)

Sliced cucumbers (for garnish)

Sliced green onions (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for better flavor.

    Prepare the Breading: In one bowl, place the flour. In a second bowl, add the panko breadcrumbs. Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in flour, shaking off the excess, then dip in the panko breadcrumbs, pressing lightly to adhere.

      Fry the Chicken: In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat. Carefully add the breaded chicken thighs and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C). Remove from the skillet and drain on paper towels.

        Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, and sriracha. Mix well and taste, adjusting the spice level according to your preference.

          Assemble the Sliders: Slice the slider buns in half. Spread a generous amount of Bang Bang sauce on the bottom half of each bun. Add a piece of fried chicken, a couple of leaves of lettuce, sliced cucumbers, and garnish with sliced green onions and fresh cilantro. Finally, top with the other half of the bun.

            Serve: Arrange the sliders on a serving platter and serve immediately with extra Bang Bang sauce on the side for dipping.
