1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Vegetable oil (for frying)

For the Bang Bang Sauce:

1/2 cup mayonnaise

3 tbsp sweet chili sauce

2 tbsp sriracha (adjust to taste)

1 tbsp lime juice

1 tsp honey

For the Bowl:

2 cups cooked jasmine rice or cauliflower rice

1 cup shredded cabbage (green or purple)

1/2 cup shredded carrots

1/2 avocado, sliced

1/4 cup chopped green onions

1/4 cup chopped cilantro

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with buttermilk, cover it, and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

    Prepare the Bang Bang Sauce: In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, and honey until smooth. Adjust the seasoning if needed and set aside.

      Coat the Chicken: In a shallow dish, mix the flour, garlic powder, onion powder, paprika, salt, and pepper. Remove the marinated chicken from the fridge and dredge each piece in the seasoned flour, shaking off any excess.

        Fry the Chicken: Heat a deep skillet or pot over medium heat and add enough vegetable oil to submerge the chicken pieces. Once the oil is hot (around 350°F), carefully fry the chicken in batches until golden brown and cooked through (about 5-7 minutes). Transfer to a paper towel-lined plate to drain excess oil.
