1 pound boneless, skinless chicken breast, cut into bite-sized pieces

1 cup cornstarch

2 eggs, beaten

1 cup panko breadcrumbs

1 cup cooked jasmine rice

1 cup shredded cabbage (green or purple)

1 carrot, shredded

¼ cup green onions, chopped

1 tablespoon sesame oil

½ teaspoon garlic powder

½ teaspoon ginger powder

Salt and pepper to taste

Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 teaspoon rice vinegar

Prep the Chicken: Season the chicken pieces with salt, pepper, garlic powder, and ginger powder.

    Coating Station: Set up a coating station with three shallow bowls: one with cornstarch, one with beaten eggs, and one with panko breadcrumbs.
