Ingredients

1 cup all-purpose flour

1/4 cup cornstarch

1/4 cup powdered sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup unsalted butter, melted

1 large egg

1/4 cup milk

2 ripe bananas, sliced

1 1/2 cups vanilla pudding (store-bought or homemade)

1/2 cup whipped cream

1/4 cup crushed vanilla wafer cookies

Mint leaves for garnish (optional)

Instructions

Prepare the Taco Shells:

    - In a mixing bowl, whisk together flour, cornstarch, powdered sugar, baking powder, and salt until well combined.

      - In a separate bowl, mix melted butter, egg, and milk until smooth. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

        - Preheat a non-stick skillet over medium heat. Lightly grease with cooking spray or butter.

          - Pour about 2 tablespoons of the batter onto the skillet to form a round pancake-like shape. Cook for about 1-2 minutes or until bubbly, then flip and cook for an additional minute until golden brown. Repeat with the remaining batter.

            - Once cool, gently shape each pancake into a taco shell by bending it over the edge of a plate or bowl. Let them cool completely.

              Assemble the Tacos:

                - Fill each taco shell with a generous spoonful of vanilla pudding.

                  - Add a few banana slices on top of the pudding.

                    - Top with a dollop of whipped cream and sprinkle crushed vanilla wafer cookies over the top.

                      - Garnish with mint leaves if desired.

                        Serve:

                          - Arrange the filled tacos on a platter and serve immediately for a delightful dessert experience.
