6 bone-in, skin-on chicken thighs

1 cup balsamic vinegar

1/4 cup honey

2 tablespoons Dijon mustard

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Marinate the Chicken: In a bowl, whisk together balsamic vinegar, honey, Dijon mustard, garlic, thyme, rosemary, salt, and pepper. Reserve 1/4 cup of the marinade for later. Place the chicken thighs in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Remove the chicken thighs from the marinade, letting the excess drip off. Sear the chicken thighs skin-side down in the skillet for about 5-7 minutes until golden brown. Flip them over and cook for an additional 3-4 minutes.

        Glaze and Roast: Pour the reserved marinade over the chicken thighs, ensuring they are well-coated. Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

          Finish and Serve: Remove the skillet from the oven and let the chicken thighs rest for 5 minutes. The glaze will thicken as it cools. Serve the chicken hot, drizzled with the balsamic glaze and garnished with chopped fresh parsley.
