4 slices of rustic sourdough bread

1 cup fresh blackberries

2 tablespoons balsamic reduction

1 cup sharp cheddar cheese, shredded

1 cup goat cheese, crumbled

2 tablespoons unsalted butter, softened

1 teaspoon fresh thyme leaves (optional)

Salt and pepper to taste

Prepare the Blackberries: In a small bowl, gently mash half of the blackberries with a fork. Mix in the balsamic reduction and thyme (if using). Season with a pinch of salt and pepper to taste.

    Assemble the Sandwich: Lay out two slices of sourdough bread. Spread an even layer of the blackberry mixture on each slice. Then, sprinkle the sharp cheddar cheese followed by the crumbled goat cheese on top of the blackberry mixture. Place the other two slices of sourdough on top to form sandwiches.

      Butter the Bread: Spread the softened butter evenly on the outside of each sandwich.

        Grill the Sandwiches: Heat a skillet or griddle over medium heat. Once hot, place the sandwiches in the skillet. Cook for about 4-5 minutes, or until the bottom is golden brown and the cheese has started to melt. Carefully flip the sandwiches using a spatula.

          Finish Cooking: Continue to grill for an additional 4-5 minutes on the other side, ensuring both sides are golden and the cheese is melted.

            Serve: Remove the sandwiches from the pan and let them rest for a minute. Slice in half, and serve immediately with the remaining fresh blackberries on the side.
