Baked Zucchini Sticks

4 medium zucchinis, cut into sticks

1 cup breadcrumbs (use panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs, beaten

½ cup all-purpose flour

Cooking spray or olive oil for drizzling

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a shallow bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper until well combined.

      Set up a dredging station: have three shallow bowls ready. In the first bowl, place the all-purpose flour; in the second bowl, add the beaten eggs; and in the third bowl, place the breadcrumb mixture.

        Take each zucchini stick and first coat it in flour, shaking off the excess.

          Next, dip the floured zucchini stick into the beaten eggs, letting any extra egg drip off.

            Finally, roll the stick in the breadcrumb mixture, pressing lightly to ensure it sticks well. Repeat this process for all zucchini sticks.

              Place the coated zucchini sticks on the prepared baking sheet in a single layer. If desired, drizzle a bit of olive oil or use cooking spray to lightly coat the tops of the sticks for extra crispiness.

                Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the zucchini sticks are golden brown and crispy.

                  Remove from the oven and let sit for a couple of minutes before serving.
