1 pound large shrimp, peeled and deveined

1 cup cooked white rice

1 cup diced bell peppers (red, green, or a mix)

1 cup corn kernels (fresh or frozen)

1/2 cup diced onion

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup sour cream

1 tablespoon lemon juice

1 teaspoon Old Bay seasoning

Salt and pepper to taste

For the Buttery Crumb Topping:

1 cup panko breadcrumbs

4 tablespoons unsalted butter, melted

1/2 teaspoon Italian seasoning

1/4 cup chopped fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a skillet over medium heat, add a drizzle of olive oil and sauté the chopped onion and bell peppers until softened, about 5 minutes. Add the minced garlic and cook for an additional minute, stirring frequently.

      Combine Ingredients: In a large mixing bowl, combine the sautéed onions and peppers, shrimp, corn, cooked rice, sour cream, lemon juice, Old Bay seasoning, and half of the cheddar cheese. Season with salt and pepper to taste. Mix well until everything is evenly coated.

        Prepare the Baking Dish: Transfer the shrimp mixture to a greased casserole dish or 9x13-inch baking dish, spreading it out evenly.

          Make the Buttery Crumb Topping: In a small bowl, combine the panko breadcrumbs, melted butter, and Italian seasoning. Stir until the crumbs are completely coated in butter.
